Looks like either will fit.
Will a full sized spare still fit underneath?
Do either stick out past the bumper to be a potential knee-knocker?
Does one 'tuck up' better...less of a chance of it getting caught on debris or a 'mound'?

The first hitch you linked to has a bow to it that will match the curve of the rear bumper if that’s important to you but the other two have twice the frame mount surface and that’s a notable difference. The receiver on mine is tucked under the bumper cover and poses no obstacle. I never remove the hitch from the receiver so yes it will get a shin if you aren’t careful. A full sized tire will fit. I just put new tires on my 03 and the 235/75r-16 spare cradled right up with no issues

The one that's got a bow to it also has some other 'tabs' on it...maybe to attach to the bumper mount bolts for added support to make up for less frame mount points....am I correct?

Exactly right. Either way you will be fine. I can’t recall anyone ever tearing their hitch off their van. Just make sure to re-torque your hardware after your first use.
