I am considering chopping up an astro to build a small RV how much of the body can you cut away without having to add reinforcement?

W/o reinforcement? none.
When Stan did his astromino and let it off the jack stands he had ripples in the body which points to stresses unaccounted for when cutting down to a pick-up.
I ran my '97 work van with barn doors on the back into the ditch one snowy day and the way it was sitting I couldn't open the back doors. That van has 280,000 miles and beat on all it's life so I expect a "little loose" but it was racked bad. When it as back on level road it was back to normal.
