I have an 89 astro and wish to switch the single wire 02 to a 3 wire 02 sensor. ANyone know how?

Why?
Why not use the original replacement part?

A three wire 02 sensor works faster and gives you better fuel to air ratio therefore saves gas and gives better take off when cold.

Yes, The other two wires are for the heater in it that helps it work if the sensor is cold , or far from the cylinder head and exhaust gasses cooler.
In 89, as in 87 like mine, the oxy sensor is very close to the left exhaust manifold and has a single purple wire.
I now have a 95 frame, engine and exhaust manifold, and my oxy sensor is located way back on the ypipe, by the catalytic converter, and is a 3 wire unit.
This same job is on my to do list for this spring. I ran it with the 1 wire and it worked, but not well, and I got an oxy code sometimes.
The schematic just shows the one wire for the sensor and the other 2 wires for the heat element. They just need power when the key is on to heat the element..
I'm in the midst of changing engines these days, and I gotta do the wires to the O2 sensor as well..

So basically when I swap over to the V8 I can add a hot from ignition and a ground to wire in the 3 wire 02? is this correct? My new exhaust is headers into 2.5 then to a dual 2.5 Y pipe out to to a 3 inch ( previously used for a cat con) back into another Y pipe same size but reversed out to dual tail pipes then to 2 mufflers in the back (like a corvette) The mufflers are dynomax super turbo's fully welded. 2.5 in and out. I will take pictures when I am installing the V8.
The two Y pipes put together basically will work in the same sense as an X-pipe which theoretically gives you more low end torque. The 02 sensor is located in the beginning of the first Y pipe. I am open to anyone's thoughts on this exhaust system as I have not put it together yet.

That should sound nice!
The O2 - Yup, The xtra 2 wires in the 3 wire sensor are just a heater element.
